Textural white blend from the famous Belgian wine buyer turned winemaker. Two native Sicilian white varieties, Carricante and Grecanico Dorato from 40 year old vines are left on skins for four days before being pressed into fibreglass, the most neutral of all aging vessels. Ripe yellow fruits and fresh ginger on the nose, the palate oozes minerality coupled with ripe stone fruits. The finish is full of chalky texture with the beautiful acid line carrying through. Thought provoking stuff from one of natural wines’ biggest names.
